White Chip Island Cookies

It’s teacher appreciation day this week and what better way to express my thanks than with a plate of these delicious white chip island cookies.  They have to be one of my favorite cookies of all time.  There is something to be said about the combination of cherries, macadamia nuts, shredded coconut and white chocolate chips that leave you taste buds begging for more.

Ingredients:

1 2/3 cup all-purpose flour

3/4 tsp.  baking powder

1/2 tsp. baking soda

1/2 tsp. salt

3/4 cup  (1 1/2 sticks) of butter/margarine (softened)

3/4 cup packed brown sugar

1/3 cup granulated sugar

1 tsp. vanilla extract

1 large egg

2 cups of premium white chocolate chips

1 cup of flaked coconut

3/4 cup of macadamia nut or walnuts

1 cup of cherries

Preheat oven to 375 degrees Fahrenheit

Recipe (from Nestle):

Combine flour, baking powder, baking soda, and salt in a small bowl.  Beat butter, brown sugar, granulated sugar and vanilla extract in large mixer bowl until creamy.  Beat in egg.  Gradually beat in flour mixture. Stir in morsels, coconut and nuts.  Drop by rounded teaspoon onto ungreased baking sheets. 

Bake for 8 to 10 minutes or until edges are slightly browned.  Cool on baking tray for 2 minutes.  

Makes about 3 dozen cookies.
