I recently caught up with the founder and owner, Cait Dwyer about her business, the community, birthday party cake trends and more…

How long have you owned the bakery?

Flour & Sun was founded back in 2009 by Denise Treco, a cupcake connoisseur and passionate baker.  After a few years of running the business, she decided she wanted to focus on some of her other passions including film and food blogging.  I had worked as the head baker since 2011 and was fortunate enough to buy the business from her in 2014!

What is it like working with your mother in the bakery?

I love working with my mother. We are best of friends and I feel lucky to get to spend so much of my time with her. She has another full time job (she works for Oak Lane Child Care Center in Chappaqua) and she pretty much spends all her free time helping me out here, I’m very lucky to have such a loving and hardworking mom. Without her I wouldn’t be where I am today, she knows how much I look up to her.

Where does your passion for baking and owning a bakery come from?

I’ve always been a very creative and hands on type of person. I spent most of my childhood in the kitchen helping out. Whether it was with my mom, my grandmother or my great-grandmother, I always wanted to bake with them. I credit my passion for cooking to mostly my dad’s mother, who was a Thornwood native. She was known in my family to show her love for her family and friends through food and I definitely do that same thing.
All the recipes and newspaper clippings that you see on the walls here have been passed down to me from her and also my from my mom’s grandmother. They both loved to cook and bake, so I really have it on both sides of my family.
As far as owning a bakery I always knew that I wanted to own my own place by the time I was 30. I’m 26, so I’ve far exceeded that goal. I graduated from Johnson & Wales University in Rhode Island in 2011 and they definitely helped me prepare for my career in baking and owning my own business.

What is your best seller/ most popular request for children’s birthday parties (in recent months)?

Frozen. We get the most requests for Anna and Elsa cakes, it has died down over the past couple months, but it’s still one of our best sellers. We’ve done cakes, cupcakes and cookies with Anna and Elsa on them (some Olaf too!). Our second best children’s party request as far as characters go is probably Peppa Pig, we make a really cute Peppa Pig cake. We provide Kidville Mt. Kisco with their cakes for children’s parties and they get these two quite often.
We’ve also just started doing tiered cakes in January, these have been very popular for children’s parties. My favorite tiered cake order that I’ve done so far was an pirate-themed order from this past weekend.

What is your bestselling item in the bakery overall?

Flour & Sun started as a cupcake bakery and even though we’ve expanded to be much more than that today, cupcakes are still extremely popular. Our classic vanilla and chocolate cupcakes with vanilla or chocolate buttercream are still our bestselling sweets. We also do a lot of cake pops.

How important is your relationship with the community, and how do you try to maintain that relationship through social media?

My family on both my father and mother’s side are from Pleasantville/Mt Pleasant, so the community is very important to me. I recognize that Pleasantville is a very close knit community and my relationship to them means a lot. We have a lot of regular customers that come in here, some are locals some come from the city. They are really what drive our business, those familiar faces that you see often.
One of the things that I love the most about this business is that we have clients who order their children’s cakes from us every year, you’re part of that families traditions and special moments, you see their children growing up. We’ve been open for 6 years now and sometimes it’s hard to believe that I’ve made Mia’s birthday cake for 4 years in a row now! I also love when we get orders for baby shower’s or children’s first birthdays and they’re like “You made our wedding cupcakes!”
As far as social media is concerned we are very active on Instagram, Facebook and Twitter. The connection you make with customers/potential customers on social media is extremely important, especially in this industry. I’m constantly updating, responding to comments and posting. We have a very loyal fan base on our social media sites. I love using it to stay in touch with them and to show off some of our special orders and new products.
